Freezer Strawberry Jam

Homemade gifts are so much fun to make and give especially when they don't take all season to make! No long cooking, canning or processing required. This recipe is simple enough to make with your children and keeps up to three weeks in the refrigerator or longer in the freezer.

Our freezer jam is not as thick as most jams because of it's quick cook time which is why it tastes more like the fresh strawberries of summer. Try our recipe for apple butter, also available on the web site, if you prefer toast toppings without added sugar.

Ingredients

  • 3 10 oz. packages frozen strawberries, thawed (3 ¼ cups)
  • 3 Tablespoons lemon juice
  • 5 cups sugar
  • 1 cup water
  • 1 box powdered pectin

In a large, non-reactive mixing bowl, combine berries and lemon juice. Using a fork or potato masher, crush the berries. If you like your jam chunky, leave some of the berries whole, if not crush them finer. Add the sugar, stir until completely incorporated.

Boil the water over high heat in a large non-reactive pot. Add pectin, stirring constantly for one minute. Add strawberry mixture to the pot.

Turn off the heat and stir two minutes more or until slightly thickened. Store in air tight containers or canning jars in the refrigerator or freezer.
