Apple Butter

Apple butter is usually made on the stove top but my Mom has once again come up with a quick cook short cut. You almost can't burn this apple butter if you follow her foolproof microwave method for the time starved (or just plain lazy, like myself).

Ingredients

  • 2 1/2 pounds apples, peeled and cored
  • 2 Tablespoons sugar (optional since the apples will be so concentrated)
  • 1 dash cinnamon or more if you prefer

Peel and core the apples. Cut them into quarters and place them in the largest microwave proof bowl that fits into your microwave. If you only have smaller bowls you may have to make smaller batches or cook it in two batches. Add the cinnamon and sugar.

Microwave on high for 15 minutes. Remove from oven and stir. Microwave on high for 15 more minutes. Remove from oven and stir. Continue to microwave the apple butter in five minute increments, removing from the oven each time to check for proper consistency.

Check for doneness by placing a spoonful of apple butter on a plate. When it cools there should be no moisture around the rim of the fruit.

Note: With particularly dry apples you may have to add some apple juice or water.
