(Carol's
Wax Paper Cookies)
My
sister Carol once baked these for a get together in her new
home. Unfortunately all the cookies stuck to the wax paper and
couldn't be served! We've since perfected the technique of getting
the cookies off the paper but love the story and pet name. The
secret here is to bake the cookies long enough. You will be
tempted to take them out too early, but leave them in until
they are deep cinnamon in color and have puffed slightly.

cup light brown sugar, packed

Tablespoons all purpose flour

½ cups chopped pecans
- 2
teaspoons pure vanilla extract

egg whites
Preheat
oven to 275°. Line two cookie sheets with parchment paper (do
not use wax paper). Butter the parchment paper. In a small mixing
bowl combine sugar, flour, salt, pecans and vanilla extract.
Set aside.
In
a large non-reactive bowl, beat egg whites to stiff peaks. Using
a rubber spatula, gently fold egg whites into sugar pecan mixture.
Using a soup spoon or small ice cream scoop drop the batter
onto the cookie sheets two inches apart.
Bake 34-40 minutes until puffed and deep golden brown. Let cool
on the cookie sheets ten minutes and then peel them off the
paper. Store in airtight containers.
