Crazy Crunch
My mom's best friend used to bring packages
of her handmade caramel corn to our family Christmas celebrations
each year. Most definitely the preferred treat amongst the children
and a favorite to this day in our house.
Ingredients

1 cup sugar
- ½
cup light corn syrup
- ½
cup of butter
- 10
cups air popped popcorn
- 1
cup whole almonds, toasted
Butter
the inside of a bowl large enough to hold the popcorn and nuts.
Butter a large mixing spoon. Set aside. Place sugar, corn syrup
and butter in a heavy bottomed, non-reactive sauce pot over
medium high heat. Bring to a boil, reduce heat to medium low
and continue boiling until the mixture reaches 300 degrees,
is golden in color and crackles in cold water when dropped from
a spoon.
Place
popcorn and nuts in large mixing bowl and drizzle the hot caramel
over the popcorn. Working quickly, stir until all the popcorn
and nuts are coated with caramel. Cool and store in airtight
containers.
