Orange, Apricot and Tofu Mousse with Fresh Fruits
Ingredients:
- 10
oz. dried apricots
- 1
tsp. orange zest
- 1
package silken tofu (12.3 oz.)
- 1-1/2
tbsp. Honey or to taste
- fresh
fruits for garnish
Heat
apricots and orange rind in a sauce pan with one cup water and
one cup orange juice. Heat to a low simmer and cook until apricots
are soft. Blend in a food processor apricots, 8 oz. cooking
liquid and tofu. Add honey and process until smooth. Chill.
Spoon into serving cups and top with fresh fruits.
