Potato Pound Cake

Ingredients

cup reduced-fat margarine

cup sugar (optional: use Sugar Twin)

cup brown sugar

1/2 cups cooked, mashed sweet potatoes

cup egg substitute

tsp vanilla

cups flour

Heat the oven to 350 degrees. Cream the margarine and sugars
in a large bowl until fluffy. Add the sweet potatoes, egg and
vanilla and beat for 2 minutes.

Add the remaining ingredients and mix well. Pour the batter
into a nonstick loaf pan (spray with nonstick spray) and bake
for 1 hour or until a toothpick inserted into the center comes
out clean.
