Sweet Potato Pound Cake

Preparation time: 25 minutes
Serves: 12
Serving size: 1 slice

Ingredients

  • 1 cup reduced-fat margarine
  • 1 cup sugar (optional: use Sugar Twin)
  • 1 cup brown sugar
  • 2 1/2 cups cooked, mashed sweet potatoes
  • 1 cup egg substitute
  • 2 tsp vanilla
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp butter-flavored extract
  • 1 tsp nutmeg
  • 1 tsp cinnamon

1. Heat the oven to 350 degrees. Cream the margarine and sugars in a large bowl until fluffy. Add the sweet potatoes, egg and vanilla and beat for 2 minutes.

2. Add the remaining ingredients and mix well. Pour the batter into a nonstick loaf pan (spray with nonstick spray) and bake for 1 hour or until a toothpick inserted into the center comes out clean.
